These cookies are perfect as a snack for school, uni, work or any time you feel like having a sweet but healthy snack. Also, feel free to experiment with changing up the ingredients, like different kind of seeds, nut butter or adding spices.
If you happen to not have an oven, you can still try this recipe by putting the cookies into the microwave for a few minutes! They won't get as cross but still very delicious.
INGREDIENTS
· 1 medium sized ripe banana
· 1 tablespoon of cashew butter
· 70g of oats
· 3 dried dates
· 1 tablespoon sunflower seeds
· 1 tablespoon cacao nibs
INSTRUCTIONS
1. Preheat the oven to 180°C.
2. Then mash the banana with a fork and add the cashew butter.
3. Chop the dates into tiny pieces and add them.
4. Now add all the other ingredients and mix everything thoroughly.
5. Form 8 small cookies with your hands. Be careful not to make them too thin as it'll cause them to break after baking.
6. Bake them in the oven for about 15 min, then flip them around and bake for another 5 min until they have a gold-brownish color.
