Wholesome & Hearty: Easy Veggie Bean Pattys | vegan recipe


Looking for a hearty, flavorful, and protein-packed vegan dish that’s as satisfying as it is nourishing? These golden veggie bean patties are packed with white beans, fresh vegetables, and warming spices like cumin and paprika. Infused with a hint of ginger and a touch of gochujang for depth, they’re perfect for a cozy dinner, a meal prep staple, or a tasty addition to any lunch bowl. Plus, they’re easy to make with simple ingredients you might already have at home! Let’s get cooking!

Ingredients

A – Main Ingredients

  • 700g cooked white beans (canned is fine)

  • 1 carrot

  • 1 potato

  • 3 spring onions

  • ½ pack (about 100g) fresh spinach

  • 1 thumb-sized piece of ginger

  • Handful of chopped walnuts


B – Spices & Seasoning

  • 1 tsp gochujang (Korean chili paste)

  • 1 tsp dried coriander

  • ½ tsp cumin

  • ½ tsp paprika

  • ¼ tsp black pepper

  • 1 tsp salt


C – For Frying & Binding

  • About 100g whole-grain flour (add gradually)

  • Olive oil (for frying)

Instructions

  1. Prep the Beans

    If using canned beans, drain and rinse them well. Add to a large bowl and mash thoroughly with a fork, potato masher or your hands.

  2. Chop the Veggies

    Peel the carrot, potato, and ginger. Dice all three into small cubes. Chop the spring onions into thin rings. Finely mince the washed spinach.

  3. Mix Everything Together

    Add all the chopped veggies, spinach and walnuts to the mashed beans. Add in the spices and gochujang (ingredients B). Mix well—using your hands makes it easier!

  4. Add Flour Gradually

    Add flour a little at a time until the mixture holds together well and can be shaped into small patties. You may not need the full 100g or maybe a bit more.

  5. Shape and Fry

    Heat a generous amount of olive oil in a large pan over medium heat. Shape the mixture into small patties and fry them for 3–4 minutes on each side, or until golden brown and crispy.

  6. Serve and Enjoy

    Your veggie bean patties are ready! Enjoy them with rice, salad, or your favorite dipping sauce.
