This super easy and healthy vegan recipe is perfect for cold fall days. You need only three ingredients: carrots, sweet potato and vegetable broth. Since these vegetables are in season, finding them should be very easy.
(for 2 people)
1 sweet potato
2 vegetable stock cubes (or enough for about 1L)
Optional: Back pepper
Peel the carrots and wash the sweet potato well.
Cut the veggies into little cubes. They don't need to be pretty as we are going to blend the soup later. But the smaller the veggies the faster they get soft.
Add the veggies to a large pot and cover them with water so that it fills up until about 2cm above the vegetables.
Bring the soup to a boil, add the stock cubes, stir well and reduce the heat.
Let the soup simmer until the veggies are soft. Stir occasionally.
Once the veggies are soft, blend the soup.
Serve & enjoy!
