Fluffy and Decadent Chocolate Pound Cake | Vegan


This exquisite pound cake is the perfect item for afternoon tea. Its moist texture and rich flavor make tea time a special occasion. Moreover, the recipe is very simple, allowing anyone to enjoy it easily!

Ingredients

A

  • 300g whole-grain flour

  • 2 teaspoons baking poweder

  • 1/2 teaspoon salt

  • 150g brown sugar

  • 1 tablespoon cocoa powder


B

  • 200 ml vanilla flavoured soy milk

  • 120g soy yoghurt

  • 120ml canola oil

  • 1/2 teaspoon vanilla essence


C

  • 240g vegan chocolate

Method


  1. Preheat the oven to 180 degrees.

  2. Grease the mold.

  3. In a large bowl, combine the ingredients from A and mix well.

  4. In another bowl, combine the ingredients from B and mix well.

  5. Add B to A and mix with a whisk until it becomes a soft, gooey batter. Note: To keep it fluffy, be careful not to overmix. Be sure to use a manual whisk instead of an electric one.

  6. Chop 150g of the chocolate into small chunks and mix them into the batter. Set aside the remaining chocolate.

  7. Pour the batter into the mold and bake for about 50 minutes. It’s done when a toothpick inserted comes out clean.

  8. Remove the cake from the oven and let it cool.

  9. After cooling, carefully remove the cake from the mold.

  10. Melt the remaining chocolate and drizzle it over the cake.

  11. Place the cake in the refrigerator until the chocolate hardens.

  12. Once hardened, it's ready to serve! Enjoy!
