My Cozy Homemade Chili Sin Carne


This recipe is inspired by the version my mum has been making for years, with a few small adjustments of my own. While it’s not an authentic chili sin carne, it’s a comforting and wholesome family recipe packed with vegetables, beans, and soy mince. Simple to make and satisfying to eat, it’s one of those cozy meals that brings everyone to the table.

`Ingredients (4 portions)

  • 2 tablespoons olive oil

  •  1 onion

  •  1 carrot

  •  2 medium-sized potatoes

  •  1 cup soy meat (minced, dry type)

  •  2 cans of kidney beans

  •  2 small cans of corn

  •  1 can of chopped tomatoes


Spices:

  •  1 tablespoon cumin

  •  1/2 teaspoon chili powder

  •  1/2 teaspoon dried coriander (optional)

  •  Salt and pepper to taste

Method

  1. Put the soy meat into a small bowl and cover it with boiling water. Leave it for 5–10 minutes until it becomes soft. Afterward, drain the water and press out any excess liquid with your hands.

  2. Mince the onion. Heat the olive oil in a large pot over medium heat, and fry the onion until it becomes translucent and shiny. Add the soy meat and keep frying until it turns golden brown.

  3. In the meantime, wash (and peel if you prefer) and dice the carrot and potatoes. Add them to the pot and fry for about 5 more minutes. Add a bit more oil if the pot looks dry.

  4. Add the spices and stir well to coat everything.

  5. Rinse the beans and corn in a mesh strainer and add them to the pot.

  6. Add the canned tomatoes. The liquid should cover the vegetables completely. If needed, fill the empty tomato can with water and add it to the pot. Stir well.

  7. Cover the pot with a lid and bring everything to a boil. Then, reduce the heat to low-medium and simmer until the carrots and potatoes are soft.

  8. Taste and add more spices if needed.

  9. Serve as is or with some rice.
